Breakfast with Expert The New Global Revolution In Food
Speakers: Coast Sullinger.
Coast Sullinger, Investor, Documentary Producer shows the audience the snaps from different films and talks about food revolution. In 50-60th due to machinery, chemical and livestock grow, good investments were made on agriculture. With the grow of population, which was shown on a chart, people faced the necessity to grow more food. Industry was concentrated among a number of large players. Consumers were not really in touch with growers and this was a big issue; we had explosion of chronic diseases such as cardiovascular diseases, cancer, diabetes etc. Food revolution has a particular importance now since it has a reaction to the legacy of the past. The consumer is concerned about health issue now. Consumers are driven by a few videos such as The Game Changes, Cowspiracy which have massive impact on consumers' trends such as vegetarianism. Coast Sullinger talks about fermentation which allows us to produce proteins which are healthier, have no environment impact than animal farm proteins and are of cheaper cost. If this segment increased from 1% of the market today to 10% of the meat industry in 2029, a real possibility, this is a tremendous growth opportunity. Another type of protein storehouse is fish that represent a healthy substitute to red meat, as it contains less saturates fat. The speaker also highlights the problem of plastics the amount of which reaches 300 million tons every year. Hopefully, there are different solutions of its recycling. Closing thought of Coast's presentation was about innovations and technologies nowadays: "It's no longer the big fish eating the small fish..it's the fast fish eating the slow fish"
